Description
Delicious blueberry peach crumble bars topped with a buttery oat topping, perfect for dessert or a snack.

- 2 cups fresh blueberries
- 2 cups fresh peaches, diced
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine blueberries and diced peaches.
- In another bowl, mix flour, oats, brown sugar, granulated sugar, cinnamon, and salt.
- Add melted butter and vanilla extract to the dry ingredients and mix until crumbly.
- Press half of the oat mixture into the bottom of a greased baking dish.
- Spread the blueberry and peach mixture over the crust.
- Sprinkle the remaining oat mixture on top of the fruit.
- Bake for 30-35 minutes or until the top is golden brown.
- Allow to cool before cutting into bars.
Notes
- For a gluten-free version, use gluten-free oats and flour.
- Store leftovers in an airtight container in the refrigerator.
- These bars can be served warm or cold.
