Description

Delicious blueberry peach crumble bars topped with a buttery oat topping, perfect for dessert or a snack.


Ingredients

Scale
  • 2 cups fresh blueberries
  • 2 cups fresh peaches, diced
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine blueberries and diced peaches.
  3. In another bowl, mix flour, oats, brown sugar, granulated sugar, cinnamon, and salt.
  4. Add melted butter and vanilla extract to the dry ingredients and mix until crumbly.
  5. Press half of the oat mixture into the bottom of a greased baking dish.
  6. Spread the blueberry and peach mixture over the crust.
  7. Sprinkle the remaining oat mixture on top of the fruit.
  8. Bake for 30-35 minutes or until the top is golden brown.
  9. Allow to cool before cutting into bars.

Notes

  • For a gluten-free version, use gluten-free oats and flour.
  • Store leftovers in an airtight container in the refrigerator.
  • These bars can be served warm or cold.
