A delicious and hearty Cheesy Beef Enchilada Bake that is perfect for family dinners.
Ingredients

- 1 lb ground beef
- 1 can (10 oz) enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8 corn tortillas
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add onion, bell pepper, garlic powder, cumin, salt, and pepper to the skillet. Cook until vegetables are tender.
- Stir in the enchilada sauce and half of the cheddar and Monterey Jack cheese.
- In a baking dish, layer 4 corn tortillas, half of the beef mixture, and half of the remaining cheese. Repeat the layers.
- Top with the remaining tortillas and cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add diced jalapeños to the beef mixture.
- Can be made ahead of time and stored in the refrigerator before baking.
- Serve with sour cream and guacamole for added flavor.
