Description

A delicious and hearty Cheesy Beef Enchilada Bake that is perfect for family dinners.


Ingredients

Scale
  • 1 lb ground beef
  • 1 can (10 oz) enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 corn tortillas
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add onion, bell pepper, garlic powder, cumin, salt, and pepper to the skillet. Cook until vegetables are tender.
  4. Stir in the enchilada sauce and half of the cheddar and Monterey Jack cheese.
  5. In a baking dish, layer 4 corn tortillas, half of the beef mixture, and half of the remaining cheese. Repeat the layers.
  6. Top with the remaining tortillas and cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.

Notes

  • For a spicier version, add diced jalapeños to the beef mixture.
  • Can be made ahead of time and stored in the refrigerator before baking.
  • Serve with sour cream and guacamole for added flavor.
