Description

A delicious and comforting cheesy beef taco bake that combines the flavors of tacos with a cheesy, baked twist.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 package tortilla chips
  • 1/2 cup sour cream (optional)
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine and heat through.
  4. In a baking dish, layer half of the tortilla chips on the bottom.
  5. Spread half of the beef mixture over the chips, then sprinkle with half of the cheese.
  6. Repeat the layers with the remaining chips, beef mixture, and cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes before serving.
  9. Top with sour cream and chopped green onions if desired.

  • Feel free to customize with your favorite taco toppings.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
  • For a spicier version, add jalapeños or hot sauce to the beef mixture.
