A delicious and comforting cheesy beef taco bake that combines the flavors of tacos with a cheesy, baked twist.

- 1 lb ground beef
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 package tortilla chips
- 1/2 cup sour cream (optional)
- Chopped green onions for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine and heat through.
- In a baking dish, layer half of the tortilla chips on the bottom.
- Spread half of the beef mixture over the chips, then sprinkle with half of the cheese.
- Repeat the layers with the remaining chips, beef mixture, and cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
- Top with sour cream and chopped green onions if desired.
Notes
- Feel free to customize with your favorite taco toppings.
- This dish can be made ahead of time and stored in the refrigerator before baking.
- For a spicier version, add jalapeños or hot sauce to the beef mixture.
