- 2 lbs chicken thighs, boneless and skinless
- 4 cups chicken broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup celery, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onions and garlic, sauté until translucent.
- Add chicken thighs and cook until browned on all sides.
- Pour in chicken broth and bring to a boil.
- Add carrots, potatoes, celery, thyme, rosemary, salt, and pepper.
- Reduce heat and let simmer for 30-40 minutes until chicken is cooked through and vegetables are tender.
- Remove chicken, shred it, and return it to the pot.
- Serve hot and enjoy!
