Description

A delicious and healthy grilled salmon dish topped with a fresh avocado corn salsa, perfect for summer barbecues.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 2 limes, juiced
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup corn (fresh or frozen)
  • 1 avocado, diced
  • 1/2 red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, diced (optional)

Instructions

  1. In a bowl, mix olive oil, lime juice, chili powder, garlic powder, salt, and pepper.
  2. Marinate the salmon fillets in the mixture for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the salmon for about 5-6 minutes on each side or until cooked through.
  5. In another bowl, combine corn, avocado, red onion, cilantro, and jalapeño to make the salsa.
  6. Serve the grilled salmon topped with the avocado corn salsa.
