- 4 salmon fillets
- 2 tablespoons olive oil
- 2 limes, juiced
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup corn (fresh or frozen)
- 1 avocado, diced
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- 1 jalapeño, diced (optional)
Instructions
- In a bowl, mix olive oil, lime juice, chili powder, garlic powder, salt, and pepper.
- Marinate the salmon fillets in the mixture for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the salmon for about 5-6 minutes on each side or until cooked through.
- In another bowl, combine corn, avocado, red onion, cilantro, and jalapeño to make the salsa.
- Serve the grilled salmon topped with the avocado corn salsa.
Notes
- For best flavor, marinate the salmon overnight.
- Adjust the spice level by adding more or less jalapeño.
