Description

A refreshing and light quinoa salad with cilantro and lime, perfect for spring.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water, bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, red onion, and cilantro.
  6. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve chilled or at room temperature.
