Description

A refreshing and flavorful grilled chicken recipe marinated with citrus and herbs, perfect for spring.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 oranges
  • Juice of 1 lemon
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together olive oil, orange juice, lemon juice, rosemary, thyme, garlic, salt, and pepper.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them.
  3. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
  4. Preheat the grill to medium-high heat.
  5. Remove the chicken from the marinade and discard the marinade.
  6. Grill the chicken for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for a few minutes before slicing and serving.

Notes

  • For extra flavor, add zest from the oranges and lemon to the marinade.
  • This dish pairs well with a fresh salad or grilled vegetables.
  • Leftovers can be stored in the refrigerator for up to 3 days.
