Description

Ingredients

  • 8 oz rice noodles
  • 1 cup shredded rotisserie chicken
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumbers
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • Crushed peanuts for garnish

Instructions

  1. Cook the rice noodles according to package instructions, then drain and rinse under cold water.
  2. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, and sesame oil until smooth.
  3. Toss the cooked noodles with the peanut sauce until well coated.
  4. Add shredded rotisserie chicken, carrots, cucumbers, green onions, and cilantro to the noodles and mix gently.
  5. Serve chilled, garnished with crushed peanuts.
