- 1 cup shredded rotisserie chicken
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp sesame oil
- 1/2 cup shredded carrots
- 1/2 cup sliced cucumbers
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- Crushed peanuts for garnish
Instructions
- Cook the rice noodles according to package instructions, then drain and rinse under cold water.
- In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, and sesame oil until smooth.
- Toss the cooked noodles with the peanut sauce until well coated.
- Add shredded rotisserie chicken, carrots, cucumbers, green onions, and cilantro to the noodles and mix gently.
- Serve chilled, garnished with crushed peanuts.
Notes
- For a spicier kick, add red pepper flakes to the peanut sauce.
