Description

A refreshing and easy-to-make cold sesame noodle salad that requires no cooking, perfect for meal prep.


Ingredients

  • 8 oz. spaghetti or noodles
  • 1/4 cup sesame oil
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey or maple syrup
  • 1 tbsp sesame seeds
  • 1/2 cup chopped green onions
  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Cook the noodles according to package instructions, then drain and rinse under cold water.
  2. In a large bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, and sesame seeds.
  3. Add the cooled noodles to the dressing and toss to coat.
  4. Mix in the green onions, carrots, cucumber, and cilantro if using.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

  • This salad can be made a day in advance.
  • Feel free to add protein like chicken or tofu for a heartier meal.
