A refreshing and easy-to-make cold sesame noodle salad that requires no cooking, perfect for meal prep.
Ingredients

- 8 oz. spaghetti or noodles
- 1/4 cup sesame oil
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp honey or maple syrup
- 1 tbsp sesame seeds
- 1/2 cup chopped green onions
- 1 cup shredded carrots
- 1 cup cucumber, julienned
- 1/4 cup chopped cilantro (optional)
Instructions
- Cook the noodles according to package instructions, then drain and rinse under cold water.
- In a large bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, and sesame seeds.
- Add the cooled noodles to the dressing and toss to coat.
- Mix in the green onions, carrots, cucumber, and cilantro if using.
- Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
- This salad can be made a day in advance.
- Feel free to add protein like chicken or tofu for a heartier meal.
- Adjust the sweetness by adding more or less honey/maple syrup.
