- 8 oz. spaghetti or noodles
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey or maple syrup
- 1/2 tsp garlic powder
- 1/2 tsp ginger powder
- 1 cucumber, julienned
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- Cook the spaghetti or noodles according to package instructions, then drain and rinse under cold water.
- In a bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, garlic powder, and ginger powder until smooth.
- Toss the cooked noodles with the peanut sauce until well coated.
- Add the julienned cucumber and sliced green onions, mixing gently.
- Serve chilled, garnished with sesame seeds.
Notes
- For a spicier version, add red pepper flakes to the sauce.
- This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
