A refreshing and easy no-cook dinner featuring cold sesame peanut noodles tossed with crisp cucumber.


Ingredients

  • 8 oz. spaghetti or noodles
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • 1 cucumber, julienned
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. Cook the spaghetti or noodles according to package instructions, then drain and rinse under cold water.
  2. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, sesame oil, honey, garlic powder, and ginger powder until smooth.
  3. Toss the cooked noodles with the peanut sauce until well coated.
  4. Add the julienned cucumber and sliced green onions, mixing gently.
  5. Serve chilled, garnished with sesame seeds.

Notes

  • For a spicier version, add red pepper flakes to the sauce.
