- 2 lbs collard greens, washed and chopped
- 1 lb smoked turkey leg or wings
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- In a large pot, add the smoked turkey and cover with chicken broth. Bring to a boil.
- Reduce heat and let it simmer for about 30 minutes to infuse the flavor.
- Add the chopped onion and garlic to the pot, cooking until the onion is translucent.
- Add the collard greens and red pepper flakes, stirring to combine.
- Cover and cook for an additional 45 minutes to 1 hour, until the greens are tender.
- Season with salt and pepper to taste before serving.
Notes
- For a vegetarian version, substitute smoked turkey with mushrooms or tempeh.
- Adjust the amount of red pepper flakes based on your spice preference.
- Serve with cornbread for a complete meal.
