Description

Corn & Black Bean Quesadillas are a quick and delicious meal that can be prepared in just 10 minutes using only 4 ingredients.


Ingredients

  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 4 flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. In a bowl, combine the black beans and corn.
  2. Heat a skillet over medium heat.
  3. Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
  4. Add a portion of the black bean and corn mixture on top of the cheese.
  5. Fold the tortilla over and cook until the cheese is melted and the tortilla is golden brown, about 2-3 minutes per side.
  6. Repeat with the remaining tortillas and filling.
  7. Cut into wedges and serve warm.
