Corn & Black Bean Quesadillas are a quick and delicious meal that can be prepared in just 10 minutes using only 4 ingredients.

- 1 cup canned black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 4 flour tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
Instructions
- In a bowl, combine the black beans and corn.
- Heat a skillet over medium heat.
- Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
- Add a portion of the black bean and corn mixture on top of the cheese.
- Fold the tortilla over and cook until the cheese is melted and the tortilla is golden brown, about 2-3 minutes per side.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
- Feel free to add spices like cumin or chili powder for extra flavor.
- Serve with salsa or guacamole for dipping.
- These quesadillas can be made vegetarian or vegan by using plant-based cheese.
