Ingredients

  • 1 cup cottage cheese
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/4 cup honey
  • 1/4 cup melted coconut oil
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the cottage cheese, honey, and melted coconut oil.
  3. In another bowl, combine the whole wheat flour, rolled oats, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. If using, fold in the chopped nuts.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes or until golden brown.
  8. Let cool before serving or storing.
