Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine cottage cheese, eggs, salt, pepper, and garlic powder.
  3. Stir in the chopped spinach and halved cherry tomatoes.
  4. If using, fold in the shredded cheese.
  5. Grease a muffin tin and pour the mixture evenly into the cups.
