- 1 cup cottage cheese
- 4 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 cup shredded cheese (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine cottage cheese, eggs, salt, pepper, and garlic powder.
- Stir in the chopped spinach and halved cherry tomatoes.
- If using, fold in the shredded cheese.
- Grease a muffin tin and pour the mixture evenly into the cups.
- Bake for 20-25 minutes or until the egg bites are set and lightly golden on top.
- Allow to cool slightly before removing from the muffin tin.
- Serve warm and enjoy!
