Description

Cowboy Caviar, also known as Texas Caviar, is a vibrant and flavorful dip made with black-eyed peas, fresh vegetables, and a zesty dressing, perfect for any fiesta or gathering.


Ingredients

  • 1 can black-eyed peas, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, diced
  • 1 jalapeño, seeded and minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the black-eyed peas, corn, red bell pepper, green bell pepper, red onion, jalapeño, cherry tomatoes, and cilantro.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, lime juice, cumin, salt, and pepper.
  3. Pour the dressing over the bean and vegetable mixture and toss to combine.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled with tortilla chips or as a topping for tacos.
