- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh cranberries
- ½ cup sour cream
- ¼ cup powdered sugar
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a pie dish to form the crust.
- In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and sour cream until fully incorporated.
- Gently fold in the fresh cranberries.
- Pour the cheesecake mixture into the prepared crust.
- Bake for 45-50 minutes or until the center is set.
- Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- For a sweeter pie, increase the sugar to taste.
- Can be topped with whipped cream and additional cranberries before serving.
- Store leftovers in the refrigerator for up to 3 days.
