- 2 cans of corn (15 oz each)
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup butter, melted
- 1/2 cup cornmeal
- 1/4 cup sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the corn, sour cream, melted butter, cornmeal, sugar, salt, and pepper.
- Mix well until all ingredients are thoroughly combined.
- Pour the mixture into a greased 9×13 inch baking dish.
- Sprinkle the shredded cheddar cheese evenly on top.
- Bake in the preheated oven for 45-50 minutes, or until the casserole is set and the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add diced jalapeños to the mixture.
