Ingredients

- 2 pounds of potatoes, diced
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/4 cup fresh dill, chopped
- 1/2 cup red onion, finely chopped
- 1/2 cup celery, diced
- Salt and pepper to taste
Instructions
- Boil the diced potatoes in salted water until tender, about 10-15 minutes.
- Drain the potatoes and let them cool.
- In a large bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, and chopped dill.
- Add the cooled potatoes, red onion, and celery to the bowl.
- Gently fold the ingredients together until well combined.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- For a lighter version, you can substitute Greek yogurt for half of the mayonnaise.
- Feel free to add hard-boiled eggs for extra protein.
- This salad can be made a day in advance for better flavor.
