- 1 medium butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
Instructions
- Turn on the Instant Pot and select the ‘Sauté’ function. Add the chopped onion and garlic, and sauté until softened.
- Add the cubed butternut squash, vegetable broth, ginger, cinnamon, salt, and pepper. Stir to combine.
- Close the lid of the Instant Pot and set it to ‘Manual’ for 10 minutes.
- Once the cooking time is complete, perform a quick release of the pressure.
- Open the lid and stir in the coconut milk.
- Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer it to a blender in batches.
- Taste and adjust seasoning if necessary. Serve warm.
Notes
- For a spicier version, add a pinch of cayenne pepper.
- This soup can be stored in the refrigerator for up to 5 days.
- Freeze leftovers in an airtight container for up to 3 months.
