Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh spinach
  • 1 cup canned artichoke hearts, drained and chopped
  • 1 cup cream cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add to the skillet.
  3. Cook chicken for about 6-7 minutes on each side until golden brown and cooked through.
  4. Remove chicken from the skillet and set aside.
  5. In the same skillet, add minced garlic and sauté for 1 minute.
  6. Add spinach and artichokes, cooking until spinach is wilted.
  7. Stir in cream cheese and chicken broth, mixing until smooth.
  8. Add Parmesan cheese and stir until melted and combined.
  9. Return chicken to the skillet, coating it with the creamy mixture.
  10. Cook for an additional 2-3 minutes until heated through.
