Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/2 cup cornstarch
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons vegetable oil
  • 2 cups cooked rice
  • 1 cup mixed vegetables (bell peppers, broccoli, carrots)
  • Green onions, for garnish

Instructions

  1. In a bowl, toss the shrimp with cornstarch until well coated.
  2. In a separate bowl, mix honey, soy sauce, garlic, and ginger to create the sauce.
  3. Heat vegetable oil in a pan over medium-high heat.
  4. Add the shrimp to the pan and cook until golden and crispy, about 2-3 minutes per side.
  5. Pour the honey garlic sauce over the shrimp and cook for an additional 2 minutes, stirring to coat.
  6. Serve the crispy shrimp over cooked rice and top with mixed vegetables.
  7. Garnish with chopped green onions before serving.
