Description

Ingredients

  • Rice paper wrappers – 8 sheets
  • Carrots – 1 cup, julienned
  • Cucumber – 1 cup, julienned
  • Red bell pepper – 1 cup, julienned
  • Avocado – 1, sliced
  • Fresh mint leaves – 1/2 cup
  • Fresh cilantro – 1/2 cup
  • Lettuce leaves – 4, torn
  • Peanut sauce – for dipping

Instructions

  1. Prepare all vegetables by washing and cutting them into thin strips.
  2. Soak rice paper wrappers in warm water for about 10-15 seconds until soft.
  3. Lay the softened rice paper on a clean surface.
  4. Place a few pieces of each vegetable and herbs in the center of the rice paper.
  5. Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top.
  6. Repeat the process with the remaining wrappers and filling.
  7. Serve the rolls with peanut sauce for dipping.
