- 2 lbs boneless, skinless chicken breasts
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup frozen peas
- 1 onion, chopped
- 3 cups chicken broth
- 1 cup heavy cream
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 package refrigerated pie crusts
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Add the diced carrots, celery, peas, and chopped onion on top of the chicken.
- Pour the chicken broth and heavy cream over the vegetables and chicken.
- Season with garlic powder, onion powder, thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours.
- Once cooked, shred the chicken with two forks and stir to combine.
- Preheat the oven to 425°F (220°C).
- Transfer the mixture to a pie dish and cover with pie crusts, sealing the edges.
- Cut slits in the top crust to allow steam to escape.
- Bake in the preheated oven for 20-25 minutes or until the crust is golden brown.
Notes
- For a healthier version, you can use low-fat cream or milk.
- Feel free to add other vegetables like corn or green beans.
