- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup beef broth
- 1 cup water
- 1 onion, chopped
- 1 bell pepper, chopped
Instructions
- In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Transfer the cooked beef to the crockpot.
- Add the black beans, kidney beans, corn, diced tomatoes, taco seasoning, beef broth, water, onion, and bell pepper to the crockpot.
- Stir all ingredients until well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot, garnished with your favorite toppings such as cheese, sour cream, or avocado.
Notes
- For a spicier soup, add jalapeños or extra taco seasoning.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
