Description

Crockpot White Chicken Chili is a hearty and flavorful dish that combines tender chicken, white beans, and a blend of spices, all cooked to perfection in a slow cooker.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (4 oz) diced green chilies
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the white beans, corn, onion, garlic, green chilies, cumin, chili powder, and chicken broth.
  3. Season with salt and pepper to taste.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and stir in the sour cream.
  6. Serve hot, topped with shredded cheese if desired.

Notes

  • For a spicier chili, add jalapeños or increase the chili powder.
  • This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
