Description

A refreshing and crunchy cucumber salad dressed with a flavorful sesame dressing, perfect for a light meal or side dish.


Ingredients

  • 2 large cucumbers
  • 1/4 cup sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce (gluten-free)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions

  1. Wash and slice the cucumbers thinly.
  2. In a bowl, whisk together sesame oil, rice vinegar, soy sauce, honey or maple syrup, and grated ginger.
  3. Pour the dressing over the sliced cucumbers and toss to coat.
  4. Sprinkle sesame seeds on top and season with salt and pepper to taste.
  5. Let the salad sit for 10 minutes before serving to allow the flavors to meld.
