Description

Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 cup diced celery
  • 1 cup diced bell pepper
  • 1/2 cup diced red onion
  • 1/2 cup sweet pickle relish
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine mayonnaise, Dijon mustard, and apple cider vinegar.
  3. Add the cooked macaroni, celery, bell pepper, red onion, and pickle relish to the bowl.
  4. Mix well until all ingredients are coated with the dressing.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 1 hour before serving.
  7. Garnish with chopped parsley if desired.
