Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries
  • 1/2 cup white chocolate chips
  • 1/4 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, mix together flour, baking powder, and salt.
  3. In another bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the dried cranberries and white chocolate chips.
  7. Spread the batter evenly in the prepared baking pan.
  8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the bars cool completely in the pan.
  10. In a separate bowl, mix the cream cheese, powdered sugar, and milk until smooth to create the frosting.
  11. Spread the frosting over the cooled bars and sprinkle with chopped pecans if desired.
  12. Cut into squares and serve.
