- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 tablespoon fresh rosemary, chopped (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the butternut squash into even pieces.
- In a large bowl, toss the cubed squash with olive oil, salt, pepper, garlic powder, paprika, and rosemary until evenly coated.
- Spread the squash in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender and caramelized, stirring halfway through.
- Remove from the oven and serve warm.
Notes
- For added flavor, you can sprinkle some parmesan cheese on top before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
