Ingredients

  • 4 large russet potatoes
  • 1 cup of shredded cheese (cheddar or your choice)
  • 1/2 cup of sour cream
  • 1/4 cup of chopped chives
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the potatoes, then slice them thinly.
  3. Soak the potato slices in cold water for 30 minutes to remove excess starch.
  4. Drain and pat the potato slices dry with a towel.
  5. Heat oil in a frying pan over medium heat.
  6. Fry the potato slices until golden brown and crispy, about 3-4 minutes per side.
  7. Remove from the pan and place on paper towels to drain excess oil.
  8. Layer the fried potato slices on a baking sheet, sprinkle cheese on top, and bake for 10 minutes until the cheese is melted.
