Ingredients

- 4 large russet potatoes
- 1 cup of shredded cheese (cheddar or your choice)
- 1/2 cup of sour cream
- 1/4 cup of chopped chives
- Salt and pepper to taste
- Oil for frying
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the potatoes, then slice them thinly.
- Soak the potato slices in cold water for 30 minutes to remove excess starch.
- Drain and pat the potato slices dry with a towel.
- Heat oil in a frying pan over medium heat.
- Fry the potato slices until golden brown and crispy, about 3-4 minutes per side.
- Remove from the pan and place on paper towels to drain excess oil.
- Layer the fried potato slices on a baking sheet, sprinkle cheese on top, and bake for 10 minutes until the cheese is melted.
- Serve hot with sour cream and chives on the side.
