Ingredients

  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups milk
  • 1/2 cup all-purpose flour (for ermine frosting)
  • 1 cup granulated sugar (for ermine frosting)
  • 1 cup unsalted butter (for ermine frosting)
  • 1 teaspoon vanilla extract (for ermine frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a separate bowl, cream the butter and brown sugar until light and fluffy.
  4. Add the molasses, egg, and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. While the cake is baking, prepare the ermine frosting by cooking the flour and milk in a saucepan over medium heat until thickened. Let it cool.
  9. In a bowl, beat the butter and sugar until fluffy, then add the cooled flour mixture and vanilla extract, and beat until smooth.
  10. Once the cake is cooled, frost it with the ermine frosting and decorate as desired.
