- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 4 (8 oz) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup fresh cranberries
- 1 tablespoon orange zest
- 1/4 cup fresh orange juice
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add the vanilla extract, eggs, orange zest, and orange juice, mixing until well combined.
- Fold in the fresh cranberries gently.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
- For a sweeter cheesecake, add more sugar to taste.
- Garnish with additional cranberries and orange slices if desired.
- Store leftovers in the refrigerator for up to 5 days.
