Description
Deviled eggs with bacon and jalapeno are a delicious twist on the classic appetizer, combining creamy egg yolks with crispy bacon and a spicy kick from jalapenos.

- 6 large eggs
- 3 slices of bacon, cooked and crumbled
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 jalapeno, finely chopped
- Salt and pepper to taste
- Chives for garnish
Instructions
- Hard boil the eggs by placing them in a pot of cold water, bringing it to a boil, then covering and letting sit for 12 minutes.
- Cool the eggs in ice water, then peel and slice them in half lengthwise.
- Remove the yolks and place them in a bowl. Mash the yolks with mayonnaise, Dijon mustard, jalapeno, salt, and pepper.
- Fold in the crumbled bacon.
- Fill the egg whites with the yolk mixture.
- Garnish with chives and additional bacon if desired.
Notes
- For a spicier version, leave some seeds in the jalapeno.
- These can be made a few hours in advance; just cover and refrigerate until serving.
- Feel free to substitute turkey bacon for a lighter option.
