- 6 large eggs
- 3 strips of bacon
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Chives for garnish
Instructions
- Hard boil the eggs by placing them in a pot of water and bringing it to a boil. Once boiling, cover and remove from heat, letting them sit for 12 minutes.
- While the eggs are cooling, cook the bacon in a skillet until crispy. Remove and drain on paper towels, then crumble.
- Peel the cooled eggs and slice them in half lengthwise. Remove the yolks and place them in a bowl.
- Add mayonnaise, Dijon mustard, salt, and pepper to the yolks and mix until smooth.
- Fold in the crumbled bacon into the yolk mixture.
- Fill the egg whites with the yolk and bacon mixture.
- Garnish with chopped chives and additional bacon if desired.
Notes
- For a spicier kick, add a dash of hot sauce to the yolk mixture.
- These can be made a few hours in advance; just keep them refrigerated until serving.
- Feel free to experiment with different types of mustard or add other toppings like paprika.
