Ingredients

  • 1012 medium apples (a mix of sweet and tart varieties)
  • 1 cup sugar (optional, adjust to taste)
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • Water (enough to cover the apples)

Instructions

  1. Wash and quarter the apples, removing any stems and bad spots.
  2. Place the apples in a large pot and add enough water to cover them.
  3. Add sugar, cinnamon, nutmeg, and cloves to the pot.
  4. Bring the mixture to a boil over medium heat.
  5. Reduce heat and let it simmer for about 2 hours, stirring occasionally.
  6. After 2 hours, mash the apples with a potato masher to release more juice.
  7. Continue to simmer for another hour.
  8. Strain the mixture through a fine mesh strainer or cheesecloth into a large bowl or pitcher.
  9. Press down on the solids to extract as much juice as possible.
  10. Serve warm or refrigerate for later use.
