Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 cup frozen peas
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked.
- Add the chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in the carrots, potatoes, and diced tomatoes.
- Pour in the beef broth and add the thyme, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and let it simmer for about 30 minutes.
- Add the frozen peas and cook for an additional 5 minutes.
- Serve hot and enjoy!

- Feel free to add other vegetables like green beans or corn.
- This stew can be made ahead of time and reheated.
- For a thicker stew, you can add a cornstarch slurry.
