- 1 cup sugar
- 1/2 cup unsalted butter, melted
- 1 cup diced peaches
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Sea salt for finishing
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- Add the melted butter, eggs, vanilla extract, and diced peaches to the dry ingredients.
- Mix until just combined, being careful not to overmix.
- Pour the batter into a greased loaf pan.
- Sprinkle a pinch of sea salt on top of the batter.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
