Description

A creamy and festive eggnog cheesecake with a crunchy gingersnap crust, perfect for holiday celebrations.


Ingredients

  • 2 cups gingersnap cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup eggnog
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine gingersnap cookie crumbs and melted butter, then press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add the eggnog, eggs, vanilla extract, nutmeg, and cinnamon, and mix until well combined.
  5. Pour the cheesecake mixture over the crust in the springform pan.
  6. Bake for 55-60 minutes or until the center is set.
  7. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a stronger eggnog flavor, use a higher quality eggnog.
  • Top with whipped cream and a sprinkle of nutmeg before serving.
  • Can be made a day in advance for better flavor.
