Ingredients

  • 1 lb grilled chicken, diced
  • 1 cup street corn (canned or frozen)
  • 1/2 cup lime crema
  • 1/4 cup cilantro, chopped
  • 1/2 cup queso fresco, crumbled
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions.
  2. Grill the chicken until fully cooked, then dice it into bite-sized pieces.
  3. If using frozen corn, cook it according to package instructions; if using canned corn, drain and rinse.
