Description

A simple and delicious recipe for making freezer-friendly breakfast sandwiches that mimic the classic Egg McMuffin.


Ingredients

  • 6 English muffins
  • 6 large eggs
  • 6 slices of Canadian bacon
  • 6 slices of cheddar cheese
  • Salt and pepper to taste
  • Butter for greasing

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a muffin tin with butter and crack an egg into each cup.
  3. Season the eggs with salt and pepper.
  4. Bake the eggs for about 15-20 minutes until set.
  5. While the eggs are baking, toast the English muffins.
  6. Once the eggs are done, assemble the sandwiches by placing a slice of Canadian bacon, a baked egg, and a slice of cheese on each muffin half.
  7. Top with the other half of the muffin and wrap each sandwich in foil.
  8. Place the wrapped sandwiches in a freezer bag and freeze.
  9. To reheat, unwrap and microwave for 1-2 minutes or until heated through.
