- 4 cups of bread cubes
- 1 cup of vegetable broth
- 1/2 cup of diced celery
- 1/2 cup of diced onion
- 1/2 cup of dried cranberries
- 1/4 cup of chopped fresh parsley
- 1 teaspoon of dried sage
- 1 teaspoon of dried thyme
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 large eggs
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the bread cubes, celery, onion, cranberries, parsley, sage, thyme, salt, and pepper.
- In a separate bowl, whisk together the vegetable broth and eggs.
- Pour the broth mixture over the bread mixture and stir until well combined.
- Grease a muffin tin and fill each cup with the stuffing mixture.
- Bake for 25-30 minutes or until the tops are golden brown.
- Let cool slightly before serving.
