Description

A refreshing chilled soup made with garden peas and mint, perfect for summer.


Ingredients

Scale
  • 2 cups fresh garden peas
  • 1 cup vegetable broth
  • 1/2 cup fresh mint leaves
  • 1/2 cup Greek yogurt
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a blender, combine the garden peas, vegetable broth, and mint leaves.
  2. Blend until smooth.
  3. Add Greek yogurt and olive oil, then blend again until well combined.
  4. Season with salt and pepper to taste.
  5. Chill the soup in the refrigerator for at least 1 hour before serving.
  6. Serve cold, garnished with additional mint leaves if desired.

Notes

  • For a vegan version, substitute Greek yogurt with coconut yogurt.
  • This soup can be made a day in advance for better flavor.
