Ingredients

  • 1 lb steak (sirloin or ribeye), cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 lb baby potatoes, halved
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden and crispy.
  3. While the potatoes are roasting, heat a large skillet over medium-high heat.
  4. Add 2 tablespoons of butter to the skillet and let it melt.
  5. Add the steak bites to the skillet in a single layer and season with salt and pepper. Cook for 2-3 minutes on each side until browned and cooked to your desired doneness.
  6. Reduce the heat to low and add the remaining butter, minced garlic, thyme, and rosemary to the skillet. Stir to coat the steak bites in the garlic butter.
  7. Once the potatoes are done, serve them alongside the garlic butter steak bites, drizzling any remaining garlic butter over the top.
