- 1 pound shrimp, peeled and deveined
- 2 medium zucchinis, sliced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine shrimp, zucchini, garlic, olive oil, oregano, thyme, salt, and pepper.
- Lay out large pieces of aluminum foil and divide the shrimp and zucchini mixture evenly among them.
- Fold the foil packets tightly to seal them.
- Place the packets on the grill and cook for 10-12 minutes, or until the shrimp are pink and cooked through.
- Remove from the grill, carefully open the packets, and garnish with fresh parsley before serving.
Notes
- Make sure to seal the foil packets well to prevent any juices from leaking out.
- You can add other vegetables like bell peppers or asparagus for more variety.
- This recipe can also be made in the oven at 400°F for 15-20 minutes.
