Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 medium zucchinis, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine shrimp, zucchini, garlic, olive oil, oregano, thyme, salt, and pepper.
  3. Lay out large pieces of aluminum foil and divide the shrimp and zucchini mixture evenly among them.
  4. Fold the foil packets tightly to seal them.
