Description

A warm and comforting stew made with sweet potatoes, lentils, kale, and coconut milk, flavored with ginger.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 cup lentils, rinsed
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 2 cups kale, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, garlic, and ginger until fragrant.
  2. Add the sweet potatoes, lentils, coconut milk, and vegetable broth.
  3. Stir in the cumin, turmeric, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes until sweet potatoes and lentils are tender.
  5. Add the kale and cook for an additional 5 minutes until wilted.
  6. Serve warm and enjoy!
