A warm and comforting stew made with sweet potatoes, lentils, kale, and coconut milk, flavored with ginger.
Ingredients

- 2 medium sweet potatoes, peeled and diced
- 1 cup lentils, rinsed
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- 2 cups kale, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon cumin
- 1 teaspoon turmeric
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, garlic, and ginger until fragrant.
- Add the sweet potatoes, lentils, coconut milk, and vegetable broth.
- Stir in the cumin, turmeric, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until sweet potatoes and lentils are tender.
- Add the kale and cook for an additional 5 minutes until wilted.
- Serve warm and enjoy!
Notes
- Feel free to add other vegetables like carrots or bell peppers.
- This stew can be stored in the refrigerator for up to 5 days.
- For a spicier kick, add red pepper flakes or fresh chili.
