Description

Gingerbread Cheesecake Bars are a deliciously festive dessert that combines the rich flavors of gingerbread with creamy cheesecake, perfect for holiday gatherings.


Ingredients

  • 1 ½ cups gingerbread cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, mix gingerbread cookie crumbs and melted butter until combined.
  3. Press the mixture into the bottom of the prepared baking pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  5. Add the eggs, vanilla extract, ginger, cinnamon, nutmeg, and salt; mix until well combined.
  6. Pour the cheesecake mixture over the crust in the baking pan.
  7. Bake for 30-35 minutes or until the center is set and the edges are lightly golden.
  8. Allow to cool, then refrigerate for at least 4 hours before slicing into bars.

Notes

  • For a stronger ginger flavor, add more ground ginger to the filling.
  • These bars can be topped with whipped cream or a dusting of powdered sugar before serving.
