Description

Delicious and healthy gluten-free quinoa veggie burgers perfect for an Earth Day BBQ.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup gluten-free breadcrumbs
  • 2 tbsp olive oil

Instructions

  1. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until liquid is absorbed.
  2. In a large bowl, mash the black beans with a fork.
  3. Add cooked quinoa, corn, bell pepper, onion, garlic, cumin, paprika, salt, and pepper to the bowl. Mix well.
  4. Stir in gluten-free breadcrumbs until the mixture holds together.
  5. Form the mixture into patties.
  6. Heat olive oil in a skillet over medium heat. Cook patties for 5-7 minutes on each side until golden brown.
  7. Serve on gluten-free buns with your favorite toppings.

  • These burgers can be made ahead of time and frozen for later use.
  • Feel free to add your favorite spices or vegetables to the mixture.
