Delicious and healthy gluten-free quinoa veggie burgers perfect for an Earth Day BBQ.

- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup gluten-free breadcrumbs
- 2 tbsp olive oil
Instructions
- In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until liquid is absorbed.
- In a large bowl, mash the black beans with a fork.
- Add cooked quinoa, corn, bell pepper, onion, garlic, cumin, paprika, salt, and pepper to the bowl. Mix well.
- Stir in gluten-free breadcrumbs until the mixture holds together.
- Form the mixture into patties.
- Heat olive oil in a skillet over medium heat. Cook patties for 5-7 minutes on each side until golden brown.
- Serve on gluten-free buns with your favorite toppings.
Notes
- These burgers can be made ahead of time and frozen for later use.
- Feel free to add your favorite spices or vegetables to the mixture.
- Serve with avocado, lettuce, and tomato for a fresh taste.
