Description

A delicious and fresh Grilled Caprese Panini with Pesto, perfect for picnics and outdoor gatherings.


Ingredients

Scale
  • 2 slices of ciabatta bread
  • 1 medium tomato, sliced
  • Fresh mozzarella cheese, sliced
  • Fresh basil leaves
  • 2 tablespoons of pesto
  • Olive oil for grilling

Instructions

  1. Preheat a grill or panini press.
  2. Spread pesto on one side of each slice of ciabatta bread.
  3. Layer tomato slices, mozzarella, and basil on one slice of bread.
  4. Top with the other slice of bread, pesto side down.
  5. Brush the outside of the sandwich with olive oil.
  6. Grill the sandwich for 3-5 minutes on each side until golden brown and the cheese is melted.
  7. Remove from heat, slice, and serve warm.

Notes

  • For added flavor, marinate the tomatoes in balsamic vinegar before adding them to the sandwich.
