Description

Ingredients

  • 2 ears of corn, husked
  • 1 ripe avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Grill the corn for about 10 minutes, turning occasionally until charred.
  3. Remove the corn from the grill and let it cool slightly.
  4. Once cooled, cut the kernels off the cob.
  5. In a large bowl, combine the grilled corn, diced avocado, red onion, and cilantro.
  6. Drizzle with lime juice and olive oil, then season with salt and pepper.
  7. Toss gently to combine and serve immediately.
