Description
A refreshing and zesty salsa made with grilled pineapple and jalapeños, perfect for summer barbecues and as a topping for tacos.
Ingredients

- 1 ripe pineapple, peeled and cored
- 2–3 jalapeños, halved and seeded
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- Salt to taste
Instructions
- Preheat the grill to medium-high heat.
- Cut the pineapple into rings and grill for about 3-4 minutes on each side until caramelized.
- Remove the pineapple from the grill and let it cool slightly before chopping it into small pieces.
- Grill the jalapeños for about 2-3 minutes until charred, then chop finely.
- In a bowl, combine the grilled pineapple, jalapeños, red onion, cilantro, lime juice, and salt.
- Toss everything together until well mixed and adjust seasoning if necessary.
- Serve immediately or refrigerate for 30 minutes to let the flavors meld.
Notes
- For a milder salsa, remove the seeds from the jalapeños.
- This salsa pairs well with grilled meats and fish.
- Can be stored in the refrigerator for up to 3 days.
