Description

A refreshing and zesty salsa made with grilled pineapple and jalapeños, perfect for summer barbecues and as a topping for tacos.


Ingredients

  • 1 ripe pineapple, peeled and cored
  • 23 jalapeños, halved and seeded
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Cut the pineapple into rings and grill for about 3-4 minutes on each side until caramelized.
  3. Remove the pineapple from the grill and let it cool slightly before chopping it into small pieces.
  4. Grill the jalapeños for about 2-3 minutes until charred, then chop finely.
  5. In a bowl, combine the grilled pineapple, jalapeños, red onion, cilantro, lime juice, and salt.
  6. Toss everything together until well mixed and adjust seasoning if necessary.
  7. Serve immediately or refrigerate for 30 minutes to let the flavors meld.

  • For a milder salsa, remove the seeds from the jalapeños.
